Nakano udon school 中野うどん学校 is located in Kotohira 琴平町, just outside of Takamatsu 高松市. This small town has it all going – shrine, onsen and lots of sanuki udon eateries. Kotohira is mainly known for its shrine, Kompirasan daigongen 金刀比羅宮… in short, it is the shrine with a 785 steps hike (people are so faithful). I will write about this shrine later. For now, it is all about the udon making experience.

The class is in 100% Japanese, but the teacher is well experienced in body language; no problem at all 🙂 The chef goes on to explain how to make the dough and the saline solution.

After preparing the saline and the right flour proportion, it was time to make the dough. Lots of squeezing by the hand.

Once the dough is formed, the hard work begins. Time to dance on the dough. Watch the video below.

After the 10min of dancing to Sakura Maru (Maruko-chan) and some other manga song. The dough is now ready for roll and cut. **In case you don’t notice, the dad next to me is totally strong, his kid is on his shoulders the whole time!

After all of that, it is now time to eat your own udon. The school prep the sauce for you – dashi, mirin and shoyu. Dip the noodle in raw egg for perfection.

Take the local train from Takamatsu to Kotohira station. From the train station, it is a 10min walk to get to the school.
